HIGH PLAINS BISON SUPER BOWL NACHOS
Crispy tortilla chips layered with spiced ground bison, melted cheese, and classic nacho toppings make this Super Bowl–ready dish bold, hearty, and perfect for sharing. Lean, flavourful bison brings a rich twist to a game-day favourite without weighing it down.
Serves: 4–6 (or 2 very dedicated people)
Ingredients
Bison
1 lb ground bison
1 tbsp olive oil
1 small onion, finely diced
2 cloves garlic, minced
1 tbsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
½ tsp oregano
Salt + cracked pepper, to taste
Splash of beef or bison stock (or water)
Nachos
Tortilla chips (the sturdy kind)
2–3 cups shredded cheese (cheddar, Monterey Jack, or a blend)
1 cup black beans, rinsed
1 cup corn (optional but elite)
Pickled jalapeños
Toppings: choose your MVPs
Sour cream or crema
Fresh salsa or pico
Guacamole
Chopped cilantro
Green onions
Lime wedges
Instructions
Cook the bison
Heat oil in a pan over medium heat. Sauté onion until soft, add garlic, then bison. Break it up gently—bison is lean, so don’t overcook.Season like a champ
Add spices, salt, pepper, and a splash of stock. Simmer 3–5 minutes until juicy and fragrant. Remove from heat.Build the nachos
Preheat oven to 400°F (205°C). On a sheet pan, layer chips → cheese → bison → beans → corn → more cheese.Bake
Bake 8–10 minutes until cheese is melted and bubbling.Finish strong
Top with jalapeños, drizzle crema, add guac, salsa, cilantro, and a squeeze of lime.
